The Importance of Grease Traps in Commercial Kitchens

If you run a business, such as a restaurant or commercial kitchen, the importance of grease traps should not be underestimated. Fat, oil and grease can cause major problems to drains and sewers, and when disposed of down a kitchen sink, can cause blockages.

These problems are obvious, but what many people don’t take into account is the pollution caused to streams and rivers by fat, oil and grease.

There are also legal requirements in place, so grease traps are vitally important to ensuring food establishments keep fat, oil and grease out of drains and sewers.

How Do Grease Traps Work?

Grease traps are specially designed units fitted to drain pipes to separate fat, oil and grease from wastewater. The wastewater passes through and flows to the sewage works for treatment, while the grease is retained in the trap for collection and disposal (at regular intervals) by a licensed waste oil collector.

Grease traps offer businesses the opportunity to be responsible in terms of their environmental footprint.

What Are Your Legal Requirements?

A business owner’s environmental responsibility is defined by legal requirements which must be adhered to. The Environmental Protection Act 1990 Duty of Care declares that every commercial premises arranging the collection and disposal of waste (including cooking oils and fats) must ensure all waste is managed correctly, from the place where it’s produced to its point of final disposal.

Businesses are also required to adhere to Environmental Protection Act Statutory Nuisance rules. Any reported complaints of statutory nuisance, such as smells or accumulation of refuse, will be dealt with by the local authority. Failure to comply can result in prosecution.

Full details of the legislation and best practice businesses must adhere to where grease traps are concerned can be found here.
