Grease traps are specially designed units fitted to drain pipes to separate fat, oil and grease from wastewater. The wastewater passes through and flows to the sewage works for treatment, while the grease is retained in the trap for collection and disposal (at regular intervals) by a licensed waste oil collector.

The Environmental Protection Act 1990 Duty of Care declares that every commercial premises arranging the collection and disposal of waste (including cooking oils and fats) must ensure all waste is managed correctly, from the place where it’s produced to its point of final disposal.
Businesses are also required to adhere to Environmental Protection Act Statutory Nuisance rules. Any reported complaints of statutory nuisance, such as smells or accumulation of refuse, will be dealt with by the local authority. Failure to comply can result in prosecution.
